My mom (born in Italy 1943) Abruzzo came to the states with my Dad in 1966. Her gnocchi is the best Italian dish for me. Thing is she hates making it. And it’s been years since she’s made it. Stubborn old Italian lady we’ve even offered to help her but she refuse’s lol.

I love all of them really. Even the more simple ones  pizza , risotto a humble focaccia absoluely magnificent

Man, an impossible question to answer! I always say from food to art to cars to fashion to shotguns for some reason the Italians just know how to do it.

I’ll go with a less obvious one (in many ways): vitello tonnato. Not sure what crazy genius Italian came up with that one but a good vitello tonnato is blow-your-mind good. I imagine it’s not as universally liked as pizza!

Cheese ravioli with meatballs in tomato sauce.  And of course pizza, all different styles of it.

I can't even pronounce what that is and have no idea what it is, but it looks delicious.  I would definitely try that.
