Hopefully a little return to normality this year and some cracking celebratons. We will run a Thanksgiving review and photo comp from Thursday local. Do you have a big one planned? I’ll be smoking the turkey on my Green Egg. Going to try out a pickle juice brine I found on one of my favorite BGE blogs. I’m also doing potatoes au gratin on my smaller Egg. My wife and sister will be handling the rest of the cooking. I’m sure I’ll smoke some sort of PC before our family arrives and something a bit larger after they leave. Seems everyone has voted standing rib roast over turkey so I'm on the hook as usual to get it right. Best part of the weekend should be the Daytona Turkey Run. Over 5,000 collector cars on show at the infield of Daytona International Speedway. Plan to spend Friday and maybe Saturday there depending on the weather. One is okay, the other still has temp 10 days in. We cancelled Thanksgiving. Only cooking half the turkey that I am picking up tomorrow morning from a turkey farm 5 miles from my house. They're VERY low key and still into board games like Phase 10, etc. That is like shoving toothpicks under my finger nails to me, so I'll probably end up asleep on the couch in front of an NFL game. Will bring a cigar and probably just deal with being judged for courting cancer, etc. If it were up to them we'd be encased in bubble wrap 24/7... grundlemere Posted November 22, 2021 Share Posted November 22, 2021 I am the cook in the family, bringing many of the superior Southern thanksgiving food traditions to the mid-Atlantic, including braised collards, baked Dijon mac-and-cheese, sautéed green beans and shallots, mashed potatoes rich with cream and rosemary, and of course many French and Northern Italian whites and light reds to accompany. The bird is truly an afterthought, the garishly large modern white turkey bred for yield and docility rather than flavor. My Florida friend will handle the bird, and she swears she has a solution for dry breast meat by roasting the bird upside down for the first three-quarters of the process. She also stuffs the bird, anathema to those of us from Southern latitudes (Florida south of, say, Gainesville, not truly being the South)—we serve our butter-soaked bread dish baked on the side as dressing, not stuffing. I will trust the process to one who loves cooking truly as much as I do and will pass judgment after tasting. Sweet potato, apple, and bourbon pecan pies served with unsweetened whipped cream and hot toddies will finish the meal. Cooking is the theme of the day for me, and we’ll relax later with the brilliant and unsung 1995 Home for the Holidays, set here in that Land of Pleasant Living sometimes called Maryland. After dinner we’ll have some of the late release of Foursquare Bajan Rum and I plan on smoking the first of my two boxes of Ramon Allones No. 2s. With no children in tow this year, the small group, I hope, will choose to stay overnight for rare beer hunting the next morning. Cheers to those who celebrate and push back against the alienation of the contemporary world with friends and family. I have 3 25lb turkeys to cook, but they're all frozen now so I'm about to start smoking a brisket overnight. I'm getting an igloo full of bloody Mary's ready as I type. I think the coworker I'm worker for on Thanksgiving is bringing some Philippine dish called pancit, rice noodles with crisp veggies and pork, over on Thursday, so I have that to look forward to. First time in a long time I won't deep fry a turkey, but instead have decided to give a go at smoking one on my "this pandemic sucks and I'm bored so I'll buy a" Kamado Joe. Crossing my fingers. Plenty of Greek apps and whatnot along with the traditional sides to distract from any turkey misfires. Besides, gravy on everything should solve any problems. I think the time is right. The food is too much to list, but there will be cognac and a SC La Fuerza unless it’s cold, then a Monte 4 and a Siglo. I will be prepared. Our routine is pretty simple and doesn't change from year to year. Turkey on the smoker, roasting pan full of bread-sausage-mushroom-sage stuffing, crockpot full of roasted garlic mashed potatoes, green beans and shallots, sweet potato casserole, dinner roles, wine and champagne, and a charcuterie board. Guests will bring corn casserole, macaroni and cheese, some version of a green salad, and pies. All just a ridiculous, difficult, messy, noisy celebration of pure gluttony and football for 10 people. I'll sneak out of the noise after dinner to either the garage or the patio for some quiet time with Sir Winston and whichever game is on. 5 Link to comment Share on other sites More sharing options...
