Duck and goose hunting with my son in Illinois.  When I left Florida it was 86 degrees F.  When I got to the pit blind the next morning it was 34 degrees F - that 50 degree change was pretty tough to take - until the shooting started!  The goose in my right hand (last picture) is the largest goose I've ever shot in my life.

Was wondering the same.  Around where I live, Canada geese are not known for eating.  They're known for destroying where ever they hang out.

Of Course you eat them!! This isn't catch and release. Haha. Goose certainly has a lot more flavor than your grocery store chicken, but if you prepare it correctly, its delicious.
