Essentially a combination of all the famous Roman pasta recipes (Carbonara, Amatriciana, Alla Gricia and Cacio e Pepe) it checks quite literally every box. Silky smooth (thanks to the eggs) spicy tomato sauce loaded with Pecorino, Guanciale and sausage. Highly recommend taking a swing at this one as it’s actually not very difficult to turn out. If I could pass on two essential tips though, it would be to temper your egg/cheese mixture with the boiling pasta water, as it helps avoid any lumps! And second would be to use a bottle of tomato passata as opposed to crushing your own tomatoes or using tomato sauce for the same reason as above. 10 1
