JohnS Posted May 14, 2018 Posted May 14, 2018 He's a Japanese-born Australian chef famous for his Japanese/French degustation menu. He has a restaurant in the Sydney CBD since 2000, before that he was in the inner-city suburb of Rozelle. Reservations require around 3 months to get a table.

godpheonix Posted May 14, 2018 Posted May 14, 2018 well for me i'd say, Cigar - Cohiba 1966 or Dip Bushido Wine - a nice Chateau Petrus Pomerol vintage(well whatever the best vintage they have at the my liquor store) Spirit - isla del tesoro rum (DYING to try this since you wrote that article Ken) Meal - honestly, at home, cooking all my favorites myself. isn't that not really the best way? plus i don't think i'd be able to afford a nice restaurant after buying that Petrus! hehe

Essentially wouldn't want formal dining before I die, I just want a mountain of BBQ spanish carabinero prawns smothered is sea salt, raw garlic and blended flat leaf parsley. Wine - something simple like a vino Verde, quinta da aveleda is a favourite when in Portugal (so actually I'd have to be in Portugal as well, it doesn't seem to travel well). Spirit - Glen Ord 28 year old Meal - Tapas, great food and you can drag it out for ages!

Main: Squid in ink with fresh baguette Desert.....Vanilla ice-cream....with some of the Pedro Ximenez poured over the top.
