Prior to COVID - when everything got crazy - I always used to grind up skirt steak for burgers and wondered why more people weren’t using it. It’s phenomenal for burgers. These days even inside skirt is so expensive I have not used it in a while. And outside skirt at Publix down here in FL can get as high as $29.99/lb. Funny, I was talking to a buddy recently about Cuban cigar prices and compared it to skirt steak. When I first saw outside skirt steak above $25/lb, I said, “that is ridiculous, I will NEVER pay that…ever.” Then one day you’re like man some crispy grilled skirt steak, soft homemade corn tortillas with some guacamole sure sounds. Wookie Posted August 7 Posted August 7 I remember when I could buy outside skirt for $9-12/lb. I would make a red wine Demi glacé reduction sauce, par boiled then roasted potato cubes and a good bordeaux. One of my favorite meat potato combos of all time.

Popular Post chasy Posted August 7 Popular Post Posted August 7 We’ve switched to ordering our meat (beef, pork and chicken) direct from farms. It’s head and shoulders above what we find at Whole Foods these days. Still haven’t figured out the seafood. Chicago has a great market called Dirk’s, but it’s a hassle to get to. Also feels good to support farmers directly. 5

Probably been 6-7 years since I have had it, processed meats are something I try to avoid completely, but a buddy sent me a picture of a sandwich yesterday and was craving it. A bit untraditional, not too crispy, served on untoasted steamed bread with mustard. More typical is a kaiser roll with ketchup and often egg and cheese. Man. So good. 8 1

First of all, there is no "aka". It is Taylor Ham. Period. Those South Jersey people have no idea what the hell they are talking about. 😂 For obvious health reasons, I try not to eat them too often, but when I do, I am in heaven. My parents and I grew up in Union County, we always called it Taylor Ham at home. I spent a lot of time down the shore, the heart of Pork Roll country, where we consumed a lot of it so I try to be bilingual…my pork roll is still better than my Spanish! I love the Mick story. I have been listening to a lot of Mick and Stones lately and despite what I can only imagine was a pretty fun life he has managed his health and physical fitness unbelievably well. I guess Mick has been my idol for different reasons as life has gone on! If he can do the occasional Taylor Ham so can I. (Taylor Ham also certainly seems more refined than pork roll if I am trying to imagine Mick saying it, he knows his shit!). 1

Then the Food and Drug Administration came along and said that it doesn't meet the FDA requirements to be called "ham". So they changed the official name to Taylor Pork Roll. But pork roll sounds a lot less appetizing that Taylor ham, so the people continued to call it that, in spite of the name change on the packaging, and it became a colloquialism. I once read that South Jersey had several companies producing generic pork roll, and they encouraged friends, family, and other locals to stop calling it Taylor ham, so they could remove the name Taylor from the product, putting their companies on equal footing with the Taylor company. 3
