I am a home brewer and added sugar to the bottle/keg, that sugar also ferments into alcohol which is what causes the carbonation. After a bit of research following your post, I do see that some rums have a small amount of residual sugar, a slight few grams per liter. Not sure how they pull that off... After a bit of research following your post, I do see that some rums have a small amount of residual sugar, a slight few grams per liter. Not sure how they pull that off...It’s not residual. It’s added after - along with god knows what. The sugar added to rum isn’t added with yeast, so doesn’t ferment into alcohol, it just ends up being sugar in the end product, not residual sugar of an incomplete fermentation. There are lists online that reveal how much sugar is present in end product rum due to Finnish and Swedish regulations (what @CaptainQuintero was referring to). The yeast eats the sugar and makes the alcohol at a strength I imagine would be similar to beer or wine, then the result is distilled to extract off the alcohol. The yeast would not survive that. Your beer will come with an alcohol grade that still allows yeasts to ferment. Folks (mods), could we please make this "sugar in my booze" its own thread if it isn't adding to the original topic? Dosage is added to Champagne so it ferment insie the bottle which is what produces the bubbles/carbonation. actually, that is not quite correct. you are thinking of tirage. that is around the 20 gms/litre of a sweet solution (plus yeast) to encourage the secondary fermentation which provides the bubbles and a little extra alcohol. the wine will then sit on the yeast for the secondary fermentation - the lees, if you like - until all finished and it reaches the level of complexity and maturation the maker wants. then follows disgorgement. dosage is added after disgorgement to provide the level of sweetness (and influence the texture) the maker wants in his champagne.
