Local sushi chef (Circle Sushi/Roswell) makes a Nigiri Uni & Hotate mix that's out of this world. Best Uni I can recall was in Lahaina at Sansei's. I swear they must've just gone across the street and pulled the urchin right out of the sea. I'm right there with you on the yellow tail and Poke too, nice lunch selection.
