Dinner tonight was sous vide Chuck Roast at 132 degrees F for 24 hours and then seared in garlic butter in cast iron. Served with a 2008 Chappellet Pritchard Hill. Amazing how dark purple and smooth the wine was at 17 years old. 8

After tasting it for the first time last Sunday at a restaurant. Completely blown away by this stuff, always loved Tannat, but had no idea they produced a port style wine. Super complex, the spine of a fabulous port (figs, chocolate, cassis, plums etc), but with some really unusual savoury aspects like linseed oil, herbals, exotic woods. Anyone else ever tried this stuff? 2 3
