Not qualified to discuss the world view for beef but I am satisfied with western Canada's high end aged beef.

French press, filter drip, espresso, macchiato, doppio, etc, etc ,etc... Bah! This ain't real coffee!! Just grab a handful of freshly roasted beans, right out of the roaster, stick 'em in your mouth and chew! Pure coffee goodness, undiluted by bland tasteless water!! jester.gif

Sorry Aussies, you are just saying you like the way coffee is prepared in OZ, not the coffee itself. Ethiopian Yirgacheffe, Jamaican Blue Mountain, Guatemala Antigua, Hawaiian Kona... now we're talkin' baby.

Can't understand this about coffee though. Australians just drink espresso diluted milk... Medium roasted French press or filter drip brewed coffee is real coffee. Espresso is not the best way to experience pure coffee flavor. In this instance Heston is wrong.

Nothing wrong with espresso, with or without milk.

I used to use a French press but found that the coffee lacked body. Have since moved to an Aeropress. What a great little device! Absolutely the best way to make coffee at home if you don't have thousands of dollars worth of grinder and espresso machine.

As someone who prepares rib eye once a week I look for great beef. How the beef is handled after being butchered and what the shop does with it is very important. I personal love dry aging of beef, but I have had great cuts that have had limited dry aging. As the proteins breakdown something magical happens. The beef I buy is domestic because I will not pay 35-40+ dollars per pound for Waygu style beef. I am normally extremely happy with a nicely marbled choice grade rib eye. Sear it off on both sides and roast it in an oven, or over indirect heat on a BBQ, and you have a masterpiece.

As for coffee, I am a shameless Starbucks guys. I get my wife her sugar filled coffee drinks every morning and a big cup of brewed dark roast for myself. However, I do know great coffee when I experience it. I love a great french press or cappuccino. Some places work magic with their beans, but unfortunately most are dinner places. I also love my Nespresso machine. It's not the best espresso in the world, but it's consistent and convenient.

I'm pretty much a coffee addict, 10-12 cups is a typical day and I brew from different methods, filter and espresso first thing, then french press throughout the day at work. IMO method wise you cant beat an espresso or americano made from fresh ground beans and an espresso machine, however it does require a lot more care and effort.

The grind needs to be exactly right and the tamp correct to pour a decent shot. I'm constantly adjusting the dial on my grinder and will throw away shots until the extraction is perfect; that's when you get the perfect mix of bitter and sweet flavours, and the real flavour of the coffee.

Unfortunately this care and attention is never seen in most uk coffee shops, and I've never experienced an coffee which tasted anything more than bland and underextracted from a chain like starbucks.

Agree espresso coffee is better in Australia (haven't tried the coffee in Italy but not very keen on the US stuff though Kona blend was interesting, would be adventurous enough to try the poop coffee in Indonesia if i ever get the chance.)

Beef - love the Kobe though that is a matter of would you like some meat marbling with your fat sir?

Bacon - now for some reason, the UK bacon actually look like real meat (ie its thick cut) and taste awesome unlike the thinly sliced bacon found pretty much every where else. But Bacon is good no matter where period.

Fuzz - i must be in a good area of town, our local woolies gets some pretty exotic cuts plus we get kangaroo steaks, which are great just seared on the barbie with some salt and pepper - served sliced in thin strips - rare.

only a problem in the deep dark south where the genetic pool is very limited ! Must be why the Wallabies tremble when they meet the All blacks smile.png

Bacon is definitely done right in the UK; even the supermarkets sell a great selection of outdoor reared pork.
