Basically, rectangular, firmer pieces, deep fried and paired with sauces as an appetizer.

MagicalBikeRide Posted April 24 Posted April 24 Cottage pie - or beef stew with mash potatoes. Love slow cooked / braised beef dishes, but I don’t get how some people eat them with a side that has the same texture. So much better with some crunchy bread and / or roast baby potatoes.

Sorry, personal remembrance kicked in there. I judged a chili cookoff several years ago and somebody brought it. I refused to taste it for the contest on principle. Lots of arguing that day including my wife trying to convince me to let it go. As you can see, I haven't. 1 6

I think you just need to switch islands Rob. West Indian fried Plantain is gorgeous. The plantain is aged a bit longer in its skin, and therefore gets a lot sweeter. Cut thickly and slow cook in oil/butter, the result is a moist salty sweet addition to your plate, that works perfectly with hard fried fish or smoky jerk pork. I too think plantain 'chips' are pointless, but not fried plantain...totally different beast. 6
