No horse in this race but would love to see an Eagles win given the Aussie connection and the fact that Brett (Mr.Birdman) could use a win in 2025 What are you up to? Your tip?

Buffalo Chicken Dip Ingredients 450g (1 lb) boneless, skinless chicken breast 225g (8 oz) cream cheese (Philadelphia) 100g sour cream 175g hot sauce (Frank’s) 30g shallot, finely minced 10g garlic, minced 50g (3/8 cup) shredded pepper jack cheese, plus extra for topping 50g (3/8 cup) shredded medium-sharp cheddar, plus extra for topping 25g (2 1/2 Tbsp) crumbled blue cheese, plus extra for topping 1g (small pinch) salt 2g (3/4 tsp) black pepper 20g (1 ½ Tbsp) chipotle in adobo, minced Instructions Poach the chicken – Bring a shallow pan of well-salted water to a gentle simmer. Add the chicken breasts and reduce heat to medium-low. Poach for 4 minutes, then flip and continue cooking for another 4-5 minutes, until the internal temperature reaches 165°F (74°C). Remove from water and let rest for 10 minutes before shredding and chopping. Mix the base – In a stand mixer fitted with the paddle attachment, combine the shredded chicken with cream cheese. Mix on medium speed until fully incorporated, then add the sour cream and mix again until smooth. Incorporate flavors – Add the hot sauce, shallots, garlic, shredded cheeses, salt, black pepper, and minced chipotle. Mix on low to combine, then increase speed to high until the mixture is well blended and slightly more broken down. Assemble and bake – Spread the dip evenly into an 8”x8” pan, then top with extra blue cheese and shredded cheeses. Bake – Place in a preheated 400°F (205°C) oven and bake for 20-25 minutes, or until bubbling and golden. Been on a bit of a Lusi heater lately. Have one lined up for Monday morning. 4 1

As a lifelong (6 decades and counting) Eagles fan, it was tremendous to see the best Eagles team in my lifetime play up to their full potential. Comfort food is the SB tradition here. Smoked sausages on Italian rolls, served with homemade cabbage slaw and oven roasted potatoes and carrots. Beers. Orange wedges and ice cream later for finishers. 1
