Popular Post LaoFan Posted September 3 Popular Post Posted September 3 Best lunch I've had in a while. 够姜大排档 The top dish is blowfish w/ a sour 野山橘 (wild mountain orange) sauce. The liver was mind blowing. The peanut/little fish dish was probably the best beer food I've had in ages. Crispy shallot chang fen. Every dish was a banger. 22 1

chasy Posted September 4 Posted September 4 String beans are that much more expensive than bean sprouts? Or maybe they reserve the biggest, juiciest testicles for the String Bean entree? 1

Popular Post LaoFan Posted September 28 Popular Post Posted September 28 Headed to SG next week. Thought I'd give a Hainanese Chicken a go. Key is dousing the rice in chicken skin/fat oil before throwing it in the rice cooker with the broth. The green onion/ginger and red chili sauce make that juicy chicken sing. 12

I like to take the chicken fat from the tail and render it down with some garlic and ginger. 1

Popular Post LaoFan Posted October 3 Popular Post Posted October 3 Thought I'd give one more Singaporean dish a rip before heading there. Went Peranakan. Look forward to trying the real thing at True Blue Cuisine. Kari Ayam Nyonya. Only thing missing (at least from ingredients) was the candlenuts. Replaced with macadamia) Start with the curry paste: Caramelize it down: Coconut milk and herbs in: 11

She would make 2 pots, one for the family and one extra hot just for me. No-one else was allowed to eat from that extra hot pot. Then again, nobody wanted to, as they couldn't take the spiciness! 1

Those 小米辣 on top are just there for decoration/colour contrast. The real spicy levels were grinded into the paste. 1
