String beans are that much more expensive than bean sprouts? Or maybe they reserve the biggest, juiciest testicles for the String Bean entree?

Headed to SG next week. Thought I'd give a Hainanese Chicken a go. Key is dousing the rice in chicken skin/fat oil before throwing it in the rice cooker with the broth. The green onion/ginger and red chili sauce make that juicy chicken sing.

Great work. I like to take the chicken fat from the tail and render it down with some garlic and ginger.

I have learned my lesson not to eat too much fatty belly blue fin tuna. It is RICH but oh so good!

Kari Ayam Nyonya.

I remember when my Ah Ma used to make this for me whenever I flew to Malaysia. She would make 2 pots, one for the family and one extra hot just for me. No-one else was allowed to eat from that extra hot pot. Then again, nobody wanted to, as they couldn't take the spiciness! :hot: :lol3:

Those 小米辣 on top are just there for decoration/colour contrast. The real spicy levels were grinded into the paste. :lol3:
