Popular Post El Presidente Posted April 19, 2016 Popular Post Posted April 19, 2016 I have to thank you all for your Briskett Burger recipes We are happy to say that we have nailed the briskett cooking procees to the point that we can now repeat it with our eyes closed. That was step one. Step two was getting a briskett burger for our cafe that was simple to do, immesely tasty, able to be repeated a 100 times a day by any staff member. We and our chef Matt tried over 16 variations from the competition entrants. Many of the burgers had the same themes so he whittled them down. Then it was off to our customers with the top 5 from our taste tasting. They effectively chose the winner. Our Briskett Burger BEEF BRISKETT SMOKED FOR 16 HOURS IN OUR SMOKER SERVERED ON A SWEET SOUR DOUGH ROLL WITH OUR SPECIAL COLESAW, CARAMELIZED ONIONS AND HOME MADE BLUE CHEESE BEEF GRAVY $8.50 The first entry that was closest was from cooper669. His recipe was Torta or brioche bun BrisketColeslawCrumbled blue cheeseDrizzle hot wing sauce of your choice. I use Franks original What we did was melt in a conservative amount of blue cheese with gravy made from the briskett drippings which were caught in the smoker. (pan underneath the briskett). The burger is rich, moist but not wet, mouth watering with the Briskett remaining the star. The touch of blue cheese in the gravy is a revelation. Adam was having one today (burger on the left). Greg had a pulled pork burger with the same ingredients except no gravy but rather home made chutney (it is on the right). Not professional photos but just shot from my camera before they hoed in. I would have eaten a couple of kilos of smoked brisket, 50 brisket burgers, same in smoked Pulled Pork, smoked chicken etc etc over the past 8 weeks. Now the job is done.....the temple can be rebuilt
