Agree on the MC#4 with coffee. Also MC#5, PLPC, PLMC, Partagas Shorts, El Principe, La Fuerza, QD50 and today the MC#1 was brilliant. 

Illy Italian Espresso grind at home 

BRCC MO Roast at office

No machina currently, only single filtered pour over. It takes more time but... with the right CC, it’s magic for the day.

I brew 1 c pourover every day, maybe 2 c per day once or twice a week. Hard to beat...one day I'll invest in a proper espresso machine

My Saeco is out for service but this coffee is awesome espresso or pour over second.

A Monsoon Malabar is one coffee I've never been able to enjoy too much. Not sur ewhy not, tried lots of different ones but just never suited me.

Because of flavors present or the lack of acidity? Monsoon malabar is about as close to non-acidic as coffee gets, whereas a Nordic light roast can be acidic as hell—something like pH 4.5.

If flavor is too mild, this one might suit you. They will talk to you about their process, and their recommended brew method at length. They even sell it green. When I first started buying from them they told me it is ultra clean, and they remove most beans that don't pass muster. I'll upload their insert they include with their purchase, pretty detailed. 

My other coffee sources are Red Bird out of Montana and Willoughby's, out of Connecticut. They also sell green coffee, which I'm pondering... Green coffee costs half the price of the same roasted beans, and you can freeze it. Will the wife allow me to roast 8oz. every Sunday and have the house smell like a coffee shop though? If I buy the roaster from Willoughty's sister company (Roastmaster) I get 8lbs. green coffee free, so essentially I get the roaster free. Wife don't give a rats ass though...

Anyone here use a Neapolitan coffee pot?  A cross between a pour over and a Bialetti.

That is awesome, What roaster do you have? I was considering the Bhemor for the longest, and regret not buying it. Price has gone up 30% in last 18 months.

Do you let the roasted beans settle for a few days, or do you use them right away? How does the flavor change throughout the week, if at all?
