Summer is here in full swing and I love nothing more than firing up the smoker/grill on the weekends. Here in central Pennsylvania, my go to woods are apple or hickory or a blend of both. There are tons of orchards in the area with an unlimited supply of other fruit woods as well like cherry and peach.

What's your go to wood for smoking?

What's your go to wood for smoking? 

Depends on what I’m smoking. Hickory is my all-rounder. Apple or Cherry for pork. Mesquite for beef. That’s my personal taste anyway.

I use apple and plum for pork butt and ribs, apple for chicken and salmon and pecan and apple for brisket, beef ribs and chuck roast.

Used mixture of apple and grape on these Pork Belly Burnt Ends yesterday. They were fantastic!

I use all types of wood, I prefer fruit woods for more delicate cooking. The only wood I really don’t like to use is hickory as it always leaves a somewhat bitter taste in my smoke no matter how little I use.

Here are my favorites:

Beef Filet - Hickory 

Beef (other than filet) - Mesquite 

Chicken - Cherry

Pork - Peach with Pecan
