Here in central Pennsylvania, my go to woods are apple or hickory or a blend of both. There are tons of orchards in the area with an unlimited supply of other fruit woods as well like cherry and peach. What's your go to wood for smoking?

Hickory is my all-rounder. Apple or Cherry for pork. Mesquite for beef. That’s my personal taste anyway. 1

Buck14 Posted July 7, 2019 Posted July 7, 2019 I use all types of wood, I prefer fruit woods for more delicate cooking. The only wood I really don’t like to use is hickory as it always leaves a somewhat bitter taste in my smoke no matter how little I use.
