Opens with spice, wood and sweet dough. Draw is perfect and smoke production is prodigious. Throughout the first third the best way to describe the flavors is spice, wood, and pastries. This one isn’t quite as full flavored as the one I smoked on Wednesday, but is smoother and doesn’t have the yeast flavor I got from time to time on the other. Second third transitions into pastry/cookie with a little salted butter. Final third is the same as the second third, which I can’t complain about! The pastry/cookie/salted butter flavor is unique and delicious! I’ll rate this a 90 as outstanding. Construction was perfect, smoke output was prodigious and the flavor was great.
