earthson Posted April 19, 2016 Posted April 19, 2016 Fresh isn't prefferable with beef. Briskets should be wet aged for 2-4 weeks in their cryovac. Diggityderp is apparently from Texas - the spiritual homeland of cow brisket and, for me, the epitome of southern barbecue. Unless you extend further south into Mexico where cabeza barbacoa reminds me why I'll never be a strict vegetarian.
