What are some of the wildest transformations in terms of flavor that you have experienced with aging? When these were relatively fresh they were full of chocolate and coffee, but after 6 years they are now displaying dark leather and cocoa notes. I just described it to a friend as a cow wearing a leather jacket, lol! 2
