A little Father 's Day Grilling. Chicken with my Texas Rub , some Brisket, some Ribs and of course potato salad and beans.

Looks great.

My wife was out if town for the weekend and I had dinner with my daughter on Saturday so I was on my own for dinner on Father's Day. Ended up being a great dinner followed by a great cigar.

Hey D,

Do you make the recipe for your texas rub public knowledge here? I need a good rub for chicken on the grill and don't have any good ideas. Being the resident grill master, can you share any tips for poultry seasoning on the grill?

I tend to use one of these:

( FYI - I always brine chicken and pork beforehand (water, salt, sugar, pepper, oil, Worcestershire sauce, soy, dry mustard, tobasco, garlic powder and onion powder.)

Ingredients:

  • 1/2 cup chili powder
  • 1/2 cup brown sugar
  • 1/2 cup salt
  • 1/2 cup fresh ground pepper
  • 1/4 cup dry mustard
  • 1/4 cup ground cumin
  • Ground red pepper to taste

  • 1 (16 ounce) bottle seasoning salt

  • 1/4 cup paprika

  • 2/3 cup chili powder

  • 1 teaspoon ground ginger

  • 1 teaspoon ground nutmeg

  • 2 teaspoons ground dry mustard

  • 1 teaspoon ground cloves

  • 1 teaspoon dry mesquite flavored seasoning mix

  • 2 tablespoons garlic salt

  • 1 tablespoon black pepper

  • 1 cup packed brown sugar

no problem, I have a bunch of others but I like these alot!

I have other's if you ever need more.

(especially some fresh rosemary and fresh garlic based!)

A fresh garlic-based one would be great. We eat a lot of pork tenderloins and I find a nice garlic rub is a great touch for them. Right now I use garlic, thyme, salt, pepper, lemon juice and olive oil. If you have something with a different spin it would be fun to try...

This is all I use for pork usually:

Take your meat, whole pork tenderloin (This also works great for a whole beef tenderloin)

stick it in a plastic bag with olive oil, fresh rosemary (a lot of it), and whole cloves of garlic smashed.

1-2 days.

Set your pork out to rest and to get room temp before grilling.

salt and pepper

Take the olive oil, rosemary/garlic mixture and slowly heat it up in a sauce pot to infuse the oil. (don't burn the garlic)

20-30 min

Grill the meat, and baste it with the oil while it's grilling. Use the Rosemary sprigs as a brush if you can.

Cook to medium with a pink center,

Let it rest.

Slice thick slices and enjoy

I love the olive oil, rosemary and garlic for pork chops or tenderloin. Delishious.
