Well, we all have our traditions for holidays, and for Memorial Day Weekend, mine is to get together with great friends and family, swim, cook, drink, eat, smoke, play games, enjoy our kids, tell stories and have fun.

All in all 11 meals were cooked over the extended/vacation weekend, but I chose to really go "lights out" on one of our dinners, after the kids went to sleep. Pictures are coming!!!!! The camera is missing in action at the moment, but I'm sure it will turn up soon. I have attached the menu that I put together and cooked.

After 6 bottles of wine, and endless cocktails into the night with cigars, it was an EPIC night.

We also went through some very memorable cigars too, around 20 plus. Some of the highlights were,

House Made Seafood Gumbo, Jumbo Wild Caught Prawn with Coastal Cocktail Sauce,

Fresh Maine Lobster Claw with an Herb & White Wine Butter Sauce,

Aged Prosciutto Wrapped Cantaloupe with Fennel Fronds.

Wine Pairing: French Chardonnay

Salad

Shaved Zucchini, Fennel & Leek with Hearts of Palm, Organic Baby Arugula, Crumbled Feta and

Sliced Aged Prosciutto with a House Made Red Wine Vinaigrette, Finished with White Truffle Oil and Orange Blossom Water.

Entrée

Dry Aged – Grilled Prime Beef Tenderloin with a Chop House Seasoning.

Served With: Fire Roasted Herb & Truffle Fingerling Potatoes,

Pancetta & Escargot Stuffed Mushrooms with Parmesan Crumble

Finished with an aged Pancetta Chip

Wine Pairing: California Old Vine Zinfandel

Dessert

Fig & Honey Crème Brulee topped with a Mascarpone Cannelle,

Accompanied by Mascarpone stuffed Mission Figs.

Finished with a Texas Honey Drizzle and Fig Syrup.

Wine Pairing: Chocolate Finale Port Dessert Wine

Pancetta Chip is just baked in the oven on a sheet pan at about 350F for 3-4 mins a side.

Snail stuffed mushrooms:

Make a compound butter.

Use good quality butter, and let it soften.

mix in chopped shallot, garlic, truffle oil, salt, pepper, parsley

Roll in plastic wrap or cover and put back in fridge

Hollow out your mushrooms, drizzle with olive, salt and pepper and roast in the oven at 350F for 10 minutes a side.

Saute chopped shallot, diced pancetta, shaved fennel together until translucent with some regular butter.

I use large Helix Snails from Burgundy. Rinse them very well. Dump the snails in your pan over medium heat, at A LOT of your compound butter, A LOT! Cook them to warm them through about 5-10 minutes, add a splash of wine at the end, I use white wine.

Fill the mushrooms with the snail mixture, I try to get two snails in each mushroom. Cover the mushrooms with grated parmesean cheese, and shaved truffles. Spoon the butter mixture from the snails over the cheese topping. Place under broiler until golden brown.

Serve with a slight drizzle of truffle oil. Garnish with chopped chive or parsley and lemon zest.

This is one of my favorite ways to eat snails, right behind my own creation of Wild mushroom, truffle and escargot risotto.
