Just reading the Gin post and noticed a little talk on limes.

I'm a straight spirit drinker and only ever add lime to Gin or Vodka. As my wife is a chef I always have the choice of ripe limes or firm, hard, straight of the tree limes in the cool room. Just curious if anyone else ripens their limes to drop the Ph and get rid of the sharp edges and introduce more sweetness. I now the sour is all part of the lime but heart burn and me have close ties to sour.

that's where you're wrong! the nice lime flavours is the key to adding limes! why else do you think those sweets have lime flavours!? for flavour, not the sourness. or you'll have kids running in the streets going:

But seriously: Aye.

Ripe, but not overly ripe to add a strong limey flavour!

However, have you ever considered using the peels to flavour the gin?

The thing is that i distil off my own gin. I've added lemon skins to the original concoction for that flavour. The juices and meat adds TOO much flavour. even when ripe, it overpowers it too much. Since you (probably) don't have a dripper or stillhead, take 200cc of gin and put it aside. bottle it in some airtight GLASS container and place the whole skin of a lime in it. Wait around 1 day, see how it develops. Wait 2 days, see how it's developing now. and so on and so forth.

If that still doesn't tickle your fancy, drip 3 drops of lime juice onto the skin and repeat.

If THAT still doesn't tickle your fancy, drip 10 drops.

Patience is key when it comes to reflavouring any sort of liquor. And from there, you know what to do! :)

do let me know how it ends up working.

what Gin do you plan to use it on? i'd go beefeater because maybe then, it'll finally have some sort of aftertaste...... ;)

naturally, don't experiment on something like Plymouth or Botantist!
