Pork Shoulder + Hickory + 12 Hours.....

To prep I coated it with a pork rub the night before, wrapped tighly and left out overnight to come to room temp. The next morning I put it on the smoker fat side up. For the first 3 hours on the hour I sprayed it with Apple Juice. I smoked it for 12 hours.

Next weekend for sure. My oldest son is graduating from college. We have family coming in for BBQ, beans and home made Cole slaw.

Yeah, I guess its that time of year again. I wish your son luck with this job market. I am just east of Raleigh. Most of the jobs( a few) in the Triangle right now seem to be medical related,Bio,and IT but these jobs are the future. I don't knew how the Charlotte area is looking. It looks like there are a few FOHers in " The Old North State." :lifepreserver:

Being western N. Carolina, what kind of slaw do you make?

That's a gorgeous shoulder! Apple juice in a spray bottle is a great idea!

guys I have to give a raving endorsement to Emile at cawcawcreek.com. Its easily the best bacon I've ever had and their small shoulder roast is just amazing. As far as I know its the only farm in the US not feeding at least some grain, their pigs are 100% pasture raised and with older heritage breeds. Good, good stuff!

Small world! I have seen his operation and it is quite impressive and his pork is second to none! I am under the impression that he does supplement with a fair amount of corn but I could be wrong or things may have changed.
