Typically I freeze everything coming straight from Cuba. Thankfully I have never had an issue. But, if a box is from 2016 does is still need to be frozen? At what point in the aging process am I safe? It seems to me that at some point the risk is no longer there. Or, should I always freeze? Thanks for the the input.

If it's fresh to you then it depends what that box has been exposed to.

  There's the possibility that eggs are there waiting for the correct conditions. There's the possibility that the box has come into contact with NC boxes or boxes that haven't been through the process etc and then contaminated. Or it could be perfectly fine.

  If you're always freezing and it's working for you then it would probably be prudent to keep doing it for peace of mind.
