Just got back from a distillery tasting. I'm a gin pig and from the moment I could acquire Four Pillars Rare Dry I have enjoyed the journey. From batch 3 ( The first available out side of a Pozible release) with the stabilisation of the anise variation to the low sixtieth batch of pure fresh peppery, juniper distillate it is today. We tasted some of the Barrel Aged (Batch 001 long sold out) and the navy strength soon the be released. The Barrel Aged is a spectacular gin aged in Chardonnay oak barrels that reveals a naked wood workshop finish to every sip at the back of citrus and spice. The Navy Strength and gunpowder proof soon to be released is an exercise in history. It is to me a tough botanically broad shouldered gin. A bartenders dream to mix with and for the neat drinkers it separates the men from the boys, call it a "New London dry with depth (Botanical Depth ) these gins don't flow in waves of flavour the take steps of grace and elegance. I thank our own Kenny G for the heads up on Four Pillars and would ask him to thank and congratulate Cameron and Stewart as well as Matt for what they have achieved. Speaking to Cameron today I look forward to the future of not only change of venue for production but small batch releases in the future. I see a great local following as well as an expat following for this gin in the future. If it tickles your fancy and you cannot get a hold of a bottle PM myself and I will make it happen these distillers deserve the effort.
