Cuba at Christmas?

My lovely wife is intent on taking a family trip this Christmas - Cuba has come up on her radar thanks to an in-flight magazine article. We are talking the two of us and our adult sons (20s). None of us have been there. I would appreciate any FOH insight into our favorite island.

There is an "ultimate visiting cube" thread on the forum. It would be a good place to start. If you are really concerned about visiting Cuba a good travel agent is worth their weight in gold. I am sure you will all have a great time!

Assuming it still happens, around Christmas the town of Remidios divides into two teams, drinks lots of rum & fires rockets at each other. Really! Good fun.

A bit undecided about that. Likely Havana, with side trips to beaches and interior. Is travel by rental car relatively straight-forward? Any recommended scenic excursions?

If you are looking for a mix, you might want to consider Jibacoa. Nice beach and under an hour away from Havana.

Alternatively, Air Canada Vacations sells a "split trip" with 3 nights in Havana and 4 nights in Varadero.

As for the car rental, I'd recommend against it. You are way better off to hire a car and driver (less liability).
