What I started with: 2 prime rib steaks

After 30 hrs of ageing

Grilled 5 minutes a side

Served with yellow/red pepper, mushroom, onion kabobs, and grilled asparagus. Washed down with a hugely extracted Syrah from Costiere de Nimes. Well received by the Mrs and junior.

steak and veggies, a classic summer time bbq. I usually go for top sirloin seeng how its less fatty (trying to watch what i eat!) with asparagus, baked sweet potatoe and whatever veggies i can grill. Looks great!

Thanks David. Next time it will be 48 hrs, and I hope to see the yellowing of the fat that you get on yours. Also 4 minutes a side rather than 5 would be even better. Cheers.
