Poniboy
This is a easy recipe when you fire the grill up and you want to have a little pre steak snack 10 fresh jalapenos or sweet peppers 1 package of cream cheese softened Fresh choped cilantro around 1/4 cup Diced sweet onion about 1/4 cup One or two cloves of crushed garlic Black pepper 2 packages center cut or high quality bacon Mix the cream cheese, cilantro, onion, garlic, and pepper in bowl. Remove the stems off the top of pepper with a small knife so the pepper is hollowed out removing the seeds. This takes most of the heat out of the pepper. Take your cream cheese mixture, using a butter knife and fill the hollowed pepper to top. I use two pieces of the center cut bacon, one piece i wrap around the pepper, the other i wrap over the top sealing the open end of pepper wich helps keep the cream cheese in while BBQ ing. Use tooth pics to hold bacon on. I usually cook on the top rack of grill the bacon drips alot of grease so watch for flair ups so they dont burn.
